Barbecue bucket list: Hillbilly Bowl at The Rub Bar-B-Que
To assemble a Hillbilly Bowl , Dan Janssen first places a fat wedge of sugar-crusted cornbread in a Styrofoam container.
“This is going to look messy,” says the owner of The Rub Bar-B-Que before smothering the cornbread with sweet, smoky baked beans made with kidney, butter and Great Northern beans. On top of the beans goes pulled pork, blackened burnt ends and a tangled nest of razor-thin onion straws.
The finished product is like beans and cornbread on steroids: Even the small size ($7.49) demands a huge appetite and a fistful of napkins.
“It’s like Chipotle meets barbecue,” says Chris Olsen, founder of finditkc.com.
The Hillbilly Bowl might look messy, but every bite of it is amazing: The pork has deep flavor and crispy edges, the beans are perfectly sweet and smoky and the tender burnt ends practically melt in your mouth. Add sweet cornbread and a side of The Rub’s dangerously addictive cheesy corn ($1.69) and you’re in barbecue heaven.
